Here’s our latest hors d’oeurve menu for those of you who have been asking what’s available this holiday season!  This is the ‘pared down’ version of our full list so if there’s something you’re looking for that you don’t see just let me know, always happy to bring back old faves and fulfill new requests!

Little Cup Combos & Tri-Dip Platters
One of the most popular of all our hors d’oeurve offerings are the ‘little cups’ we do made out of phyllo, tortillas, or pita with assorted fillings.  Below are what we’ve found to be the fave selections….all you have to do is choose three that appeal to you and the type of ‘little cup’ you’d like and we do all the rest!  Our “Tri-Dip” platters consist of three selections from the list below arranged in a large cloverleaf basket with appropriate breads, flatbreads, toasts, crackers, and/or veggies for dipping & dunking.   And if there’s something you’d like that you don’t see on the list please feel free to ask me; we’re more than happy to fulfill requests!

Greetings all!

Swinging into the first of the crazy Christmas weeks with a menu focused on nutritional & comfort boosting items to help with the holiday stress…which I won’t add to by mentioning how many shopping days are left!

The usual routine, folks…orders in by TUESDAY 6:00  with pick-ups starting THURSDAY 4:00 and, as usual, if Thursday isn’t good for you just let me know and we’ll make alternate arrangements.  Don’t forget to tell me what time you’d like to get your order so we can make sure to have it ready for you!

Almost all of our Holiday Party slots are fillled but there’s still a couple of openings left.  And don’t forget you can also order our tasty, tempting, and healthful hors d’oeurves, dips, & spreads for your own entertaining.  Everything freshly made from scratch of course….stash a few in your freezer for last minute get togethers!  Complete party pick-ups are also (as always) available so if you’d like the goodies but not the service just lemme know!

I don’t know about anyone else, but I’m ready for the snow!  It just doesn’t feel like holiday time without it!

“Cream” of Chicken & Spinach — Our home-made, extra rich, defatted chicken broth lightly thickened w/ whole grain flour, laced w/ chunks of roasted chicken, & given a nutritional whammy with smoothly puréed spinach…zero fat yogurt gives it it’s creaminess.  Perfect comfort food for stressful pre-holiday preparations!

Roasted Fennel & Buckwheat Salad – We had the roasted fennel & couscous salad a few weeks ago and it was wildly popular….this time around we’re going with whole grain buckwheat along with fennel, carrots, onions, & celery all lightly tossed in canola oil & high heat roasted.  Toasted sliced hazelnuts for crunch and a tangy apple cider vinaigrette w/ fresh parsley to tie it all together…great as it is or try it warmed up with crumbled feta for a quick & filling lunch.

Citrus Mint Marinated Veggie Salad — Lightly blanched broccoli & cauliflower combined with carrots, celery, red onion, zuchinni, fennel, & shredded fresh mint…all ‘coated not floated’ in a lemon, lime, & orange zest spiked citrus & white balsamic vinaigrette.

Chicken Salad w/ Sundried Tomato Vinaigrette
– Another mayo-less sandwich filling!  Chunks of chicken with red & green peppers, onions, & our herbed home-made sundried tomato & balsamic vinaigrette…great loaded into a whole grain baguette or try it on a bed of baby arugula!

Dill-icious Egg Salad
– Our classic egg salad given a spring like zap with finely minced fresh dill along with green onions, celery, & a touch of light mayo.  Great for a quick & easy protein boost!

“Pasta Sauce of the Week” — Smoky Bacon, Leek, & Broccoli Carbonnara – Surprisingly low fat with the nutritional boost of broccoli and the flavour boost of sautéed leeks this creamy pasta sauce is perfect with fettucinne or tagliatelle….slow cooked bacon bits, lightly steamed broccoli florets, and fresh leeks in a parmesan garlic cheese sauce made w/ low fat milk & whole wheat flour instead of the classic heavy cream.

“Tarte of the Week” Classic Tourtiere, But, Well, Not –  Extra lean ground beef, pork, & veal sautéed & defatted, then mixed with golden sautéed onions & creamy mashed potatoes seasoned with classic Québecoise tourtiere spices & wrapped in a crispy, low fat, phyllo crust instead of the lard-heavy traditional pastry….a welcome back to Québec to a returning friend from Down Under!

Roasted Butternut & Whole Grain Barley Risotto
– Quite a few of you have requested a risotto of some sort but doing a nice risotto with brown rice isn’t *quite* possible so we’re offering this variation made with whole grain barley instead.  Slow simmered & constantly stirred whole grain barley is combined with our home-made veggie broth, fresh grated parmesan cheese, caramelized onions, red peppers, and roasted diced butternut squash. Classic technique with ‘healthed up’ ingredients!

Glamorgan Chicken Breast – Skinless, bone-in chicken breast filled with an herbed leek & whole grain bread stuffing then slow roasted till tender & juicy.  Blanketed with a smooth, creamy, and low fat sauce thickened with puréed potatoes & given a flavour blast w/ slow sautéed leeks….served on a bed of brown rice & roasted carrot pilaf.

Dark Chocolate Caramel Bread Pudding, a.k.a. “He Shoots! He Skorrs!”
– This time around we’re “decadent-izing” our ever-healthful bread pudding with skorr chips, 70%  dark chocolate chunks (for a start of winter serotonin boost!), and dutch process cocoa powder…all mixed with organic multigrain bread, flax seed (for extra omegas), eggs, low fat milk, a touch of sugar, and a splash of vanilla, then topped with a drizzle of dulce de leche, cinnamon brown sugar, more skorr chips, & baked.  Try it warmed up with a scoop of vanilla ice cream for an extra treat!

Surprise! Fruit Salad -- After several weeks of no fruit salads my wrist feels good enough to do the slicin’ & dicin’ required so we’re going back to the Surprise! version which, as most of you know, uses whatever is beautiful & fresh at my fruit guy’s on Thursday morning!

A couple of requests again this week (and apologies to K regarding the tartes…the ham ones will be back soon!!), a “Swingin’ Both Ways” soup, a couple of old faves, and a new main course of “Lemon Herb Roasted Chicken w/ Autumn Harvest Veggies” that marks the first time we’ve offered whole (or half!) roasted chickens!  “Happy & Harmonious” is back again with an “Amaretto Apricot & Almond” version…so if it appeals to you then order enough for two weeks since it won’t be back till then, and when it is back it’ll be a different flavour (of course!)

African Black Bean & Peanut Soup
— Our twist on a classic West African soup…tomatoes, onions, brown rice, black beans, finely shredded kale, & peppers in a spicy vegetable broth enriched with peanut butter.  Sounds weird, tastes great!  Complete proteins via the beans + rice + peanuts, blast of vitamin-y goodness from the kale, lycopenes from the tomatoes & peppers, and despite the peanut butter really really low fat!

German Potato Salad — Chunks of local crop potatoes tossed while still warm with an apple cider vinaigrette spiked with Dijon mustard, then combined with sliced green onions, crispy bacon bits, celery, & fresh parsley.  Traditionally served warm or at room temperature it’s also great cold!  (And again, not a meat eater?  “Swingin’ Both Ways” again here so we’re happy to do a bacon free version for you!)

Cold Blasting Cole Slaw – So many people I know are sniffly sick right now so thought we’d bring back this client fave…finely shredded cabbage, kale, & carrots with red pepper, mango, fresh lime, & cilantro and a touch of canola oil….a blast of antioxidants, betacarotene, & kale-ish green goodness to help chase away colds!

Curried Chicken w/ Mango PIckle & Currants – Slow roasted chicken finely chopped and mixed w/ quick sautéed zucchini, diced pickled mango, green onions, currants, & our Madras curry blend…all held with a touch of zero fat yogurt.  Try it on whole grain naan bread for a different kinda sandwich!

hai Coconut Red Curry Tofu – A combination of soft & firm tofu blended with thai red curry & coconut milk till smooth & spreadable then finely julienned snow peas, carrots, green onions, & sweet peppers added for crunch.  Makes a great dip for veggies and wonderful spread on whole grain rice crackers.

Pasta Sauce of the Week — Shrimp & Roasted Fennel Marinara Sauce – Steamed jumbo shrimp gently simmered with sweet peppers, onions, tomatoes, & roasted fennel, just a touch of white wine and a hint of lemon zest.  Perfect on whole grain fettucine and pretty darn good on a bed of rice too!

Tarte of the Week — Chicken Pot Pie, But, Well, Not
– Tender cubes of oven roasted chicken slow simmered in a low fat ‘gravy’ with diced carrots, onions, celery, petit pois, & green beans….all wrapped in our infamous light’n'crisp phyllo pastry for a down home taste without the extra calories of “real” pastry!

Great Green Goodness Cannelloni
– Fresh, multigrain pasta sheets wrapped around a filling of sautéed kale, spinach, & swiss chard blended w/ slow sautéed spanish onions & garlic, low fat cream cheese, & light mozzarella…topped with an herbed tomato sauce & more grated cheese, then baked.  Nonna would approve!

Lemon Herb Roasted Chicken w/ Autumn Harvest Veggies – Air chilled whole chickens slow roasted with a lemon zest & herb seasoning under the skin and stuffed with chunks of onions & juicy fresh lemons.  Served with our “Autumn Harvest” roasted veggies….butternut squash, carrots, potatoes, zuchinni, onions, & celery gently tossed in extra virgin olive oil & fresh herbs.

Happy’n'Harmonious Whole Grain Breakfast Mélange — Our own combination of ‘rolled’ whole grains (oats, wheat, spelt, barley, quinoa, rye) united w/ toasted buckwheat, chia, flax, & hemp to give you complete proteins, omegas, fiber, & complex carbs.  All lightly toasted & ready to be simmered into a hot’h'hearty breakfast.  Not a fan of hot cereal?  Try our lightly sweetened w/ honey, extra toasty granola version!

Honey Cranberry & Pear Walnut Crisp – Tangy fresh cranberries gently tossed with diced sweet pears, whole wheat flour, crystallized ginger, cinnamon, a touch of buckwheat honey and butter, then smothered with our low fat low sugar multigrain & flax crisp topping that’s been given extra crunch (and omegas!) with toasted walnuts this time around and a healthy zap of dried ginger.  Baked till bubbly & browned.  Great as dessert with a scoop of ice cream and *perfect* as a breakfast alternative for an end of the month treat!

Black Bean & Bacon Soup — Last time our bacon soup was from southern France, this time we’re heading south of the border with this spicy smoky treat…black beans slow simmered in our homemade veggie broth with crispy bacon bits, peppers, onions, carrots, celery, tomatoes, chiopolte peppers and mexican spices.  Add a mulltigrain baguette & green salad and you’ve got complete proteins and a full meal!

Speedy Thai Red Curry “Risotto”

wanted something quick’n'easy but super good for me tonight, and since it’s been a rough week i wanted something comforting as well.  oh, and it had to be super easy since left handed ccoking is not my forte.  picked up some boneless chicken thighs, a bag of baby spinach, fresh pumpkin (already cut in chunks), ad a few staples, then stopped at the kitchen to see what was left in the fridges there.  scored a half can of thai red curry paste, a can of coconut cream, red pepper, green onions. and zucchini.

got home & put a large skillet on to pre-heat while i unpacked everything, then tossed the thighs in.  while they were browning i cut the pumpkin, red pepper, & zucchini into chunks and added them along with a cup of brown rice.  stirred the curry paste into a cup of hot water, then poured that & the coconut cream over it all, gave it a stir & reduced the heat to low.  let it cook for about 30 minutes, checked to see if it needed more liquid (nope), stirred it again, and put it back on the heat for another ten while i sliced the green onions….added those and the bag of spinach and dinner was ready.  would’ve been nice w/ some fresh cilantro & sliced green chilies, but there’s always next time!

first please excuse the ‘no caps’ & the brevity this week.  as many of you know i took a bad tumble at the kitchen last week while cleaning and have broken my right wrist, which is making typing (and many other things!) a bit frustrating.  never fear tho’, there *is* a list this week thanks to many volunteers, my wonderful & amazing staff kidz, and (especially!!) Dr. S. who took me under his wing and is making sure that i’m very, very well taken care of.

How Fast Can You Make Dinner? Lemmetellya….

I know everyone is short on time, and wants to eat better, but it’s haaaaard to prepare healthy stuff fast.  You can always order from “The Seekrit List” (of course!) but here’s one of my fave insta-3-course-meals that’s ready in the time it takes to boil pasta pretty much.

On my way home from running today I started figuring out what was in the fridge and what i would have for my post-run meal.  Quickly realized that there’s not much here so stopped in at the fruit store to grab a couple of things.  I needed something that would feed me pretty much instantly, but still be good for me, and I wanted ample carbs + protein for recovery since I kinda pushed hard running this afternoon.

One of the things I knew I had was a seven-bean mix in the freezer.  Now *this* is a great trick….cook several types of beans & mix’em together (makes them much cheaper) or drain/rinse a can of seven bean mix (much easier and what I do cuz, well, hello? one person here.)  Either way put a couple of handfuls of the well drained beans in a single layer in a large zip-loc, then set it on a cookie sheet.  Smooth the beans out so they make a just-barely-touching layer and freeze.  Give’em a quick smack on the counter once they’re and they’ll break apart….pour into another (smaller) ziploc or use immediately.  I also knew I had a couple of small beef tournadoes that I needed to use right away, and some Catelli “Smart” spaghettini in the cupboard.

So I picked up a box (6 oz) of organic baby greens (Earthbound maché mix w/ chicory & radiccio), a small slice of Danish blue cheese, fresh blueberries, and a couple of gorgeous Roma tomatoes.  Got home & turned two burners on high, put my wee frying pan on one, and a pot of hot water on the other.  Got a handful or two of the frozen bean mix out of the freezer and ran some hot water over it to thaw quickly.  While I was waiting for the frying pan to heat up & the water to boil I crumbled about half the blue cheese into a large bowl.  Added a couple of tbsp of milk, some fresh ground pepper, and a touch of sea salt then mooshed it all together into a quick, chunky dressing.  Put the tournadoes in the frying pan and the spaghettini in the (now boiling) water, then diced the tomatoes & added to the blue cheese mix along w/ the mixed beans & half the salad mix.  Tossed it all together really well then took (almost) all the greens out and spooned a bit of the bean/tomato/cheese mix on top….salad to start in on while the pasta/steak cooked.  The steak was done first so I thin sliced it and added to the extra bean/tomato/cheeese combo, stirred it all together along w/ the pan juices, then added the (drained) hot pasta & the rest of the greens.  Crumbled a bit more of the blue cheese on top and voila! Pasta dinner w/ baby greens salad….dessert will be the blueberries w/ yogurt & maple syrup along with a slice of the leftover pumpkin gingerbread.

Veggie Portions:  8  (tomatoes = 2, baby greens = 3, blueberries = 2, pumpkin =1)

Protein Portions: 3 (steak = 2, cheese = 1/2, yogurt = 1/2)

Carb Portions: 5 (beans = 1, pasta = 2, pumpkin gingerbread = 2)

This Week’s Seekrit List

Greetings!

Getting the list out early this week to make up for the lateness the last couple of weeks!  A much quieter week coming up in the kitchen so we’ve got a few more complicated selections on the menu, including “The Stew That Started It All” that so many of you requested last week and a “Faux Pho” that’s new to the list!  Keep those requests coming, I love being able to do them for you.

Same routine as usual with orders in by TUESDAY @ 6:00 p.m. (pleeeaase!!!) and pick-ups starting THURSDAY @ 4:00 p.m., and (as usual) if Thursday isn’t good for you just let me know and we’ll make alternate arrangements.  We’re also more than happy to put your order in a cab for delivery if your time is crunched!

Faux Pho – Made this a few weeks back for myself & a couple of friends and when seekrit peeps found out, well, they wanted it too.  Our keffir lime leaf, ginger, & lemongrass seasoned home-made veggie broth with baby bok choy, shiitake mushrooms, carrots, snow peas, & baby corn…rice noodles, spring onions, bean sprouts, fresh basil, thai chilies, & lime wedges sent on the side for you to add at the last minute to the heated broth.  Not quite ‘real’ pho, but a fabulous faux pho none-the-less!  Prefer yours with beef or chicken?  Add thawed slices of chinese fondue meat for a quick protein punch.

Chicken Veg & Orzo – Classic (really!) comforting home-made chicken broth with carrots, onions, celery, green beans, peas, corn, zucchini, orzo, & fresh herbes.  Perfect for fall sniffles!

Jitterbug Beet Salad
— Beets are another powerhouse of nutrition with high levels of potassium, iron, manganese, fiber, folate, & vitamin C.  This time around we’re using steamed fresh red & yellow beets, julienned red onion, fresh navel orange chunks, & sweet green peppers in a fresh dill & white balsamic vinaigrette.  Bonus points and a cowboy hat to anyone who gets the jitterbug reference.

Thai Coconut Red Curry Tofu
– A combination of soft & firm tofu blended with thai red curry & coconut milk till smooth & spreadable then given a touch of crunch with finely julienned snow peas, carrots, green onions, & sweet peppers.  Makes a great dip for veggies and wonderful spread on whole grain rice crackers.

Roasted Red Pepper & Chicken Salad
— Another mayo-less chicken salad!  This one with diced roasted red peppers, Italian parsley, fresh basil, green onions, & chicken chunks all lightly dressed with a white balsamic & olive oil vinaigrette.  Wonderful packed into a whole grain baguette for lunch on the go, or try topping a whole grain flatbread with it, adding some grated mozzarella or crumbled chevre then running it under the broiler for an impromptu gourmet pizza!

Tarte of the Week — Chicken Pot Pie, But, Well, Not – Tender cubes of chicken slow simmered in a low fat ‘gravy’ made of our home-made chicken broth with diced carrots, onions, celery, petit pois, corn, red potatoes, & green beans….all wrapped in our infamous light’n'crisp phyllo pastry for a down home taste without the extra calories of “real” pastry!

– A special treat for the eggplant lovers out theret!  Cubes of eggplant lightly coated in a garlic, cardamon, ginger, & sambal oelek glaze, then high heat roasted & combined with lightly stir-fried long beans, baby corn, bamboo shoots, onions, red peppers, ginger, & cilantro, ….served on a bed of steamed long grain brown rice.
