<p> <strong>Quinoa Crunch Pancakes</strong> &#8212; Whole grain flour, flax, chia, hemp, &amp; tri-colour quinoa make these pancakes high in protein &amp; fiber while keeping the fat content waaaaay low.  Lightly sweetened with Quebec maple syrup they’re a perfect start to the day.  Antioxident packed fresh blackberries &amp; toasted hazelnuts are partying it up as the featured flavour of the the week!<br /> <em>Two Large &#8212; Classic &#8212; $3.50            Four Large &#8212; Classic &#8212; $6.50<br /> Two Large &#8212; Blackberry &amp; Hazelnut &#8212; $4.75    Four Large &#8212; Blackberry &amp; Hazelnut &#8212; $7.50<br /> </em><br /> <strong>Chevre &amp; Champignons Sauvage </strong>— A medley of wild mushrooms in a rich tasting (but low fat!) smooth &amp; soothing veggie broth enriched with puréed slow sautéed cremini &amp; button mushrooms, fresh herbes, whole wheat flour, &amp; zero fat Greek yogurt, all given a flavour blasting boost with herbed soft chevre whisked in at the last minute.  Try stirring in a handful of baby spinach or arugula leaves when you’re re-heating it for a ‘greened-up’ variation!<br /> <em>    500 ml &#8212; $4.00        1 liter &#8212; $7.50</em></p>
<p> <strong>Red Lentil w/ Curry Roasted Veggies </strong>– Tiny &amp; tender red lentils slow simmered in our home-made veggie broth with carrots, sweet potatoes, onions, peppers, &amp; celery tossed with canola oil &amp; curry powder then high heat roasted before being added to the soup at the last minute with fresh cilantro &amp; a touch of lime zest + juice for a full flavour spectrum!  Try it with a dollop of yogurt added for extra calcium &amp; creaminess!<br /> <em>    500 ml &#8212; $3.50        1 liter &#8212; $6.50</em></p>
<p> <strong>Cajun Chicken &amp; Black-Eyed Pea Gumbo </strong>&#8211; Home-cooked black eyed peas, southern greens, okra, carrots, celery, onions, tomatoes, &amp; our own Cajun spice mix slow simmered in our extra-rich, de-fatted chicken broth.  A taste of NOLA for these chilly winter days, and this week’s ‘meal-in-a-bowl’ soup!<br />   <em>  500 ml &#8212; $4.00        1 liter &#8212; $7.50</em></p>
<p> <strong>Dilled Tofu Dijonnaise</strong> – The tofu dip/spread that launched a bazillion variations! This version combines firm tofu with dijon mustard, onions, fresh dill, lemon juice, canola oil, &amp; finely grated carrots for a beta-carotene &amp; protein filled vegan sandwich filling.  Great as a dip for pepper strips &amp; broccoli too!<br /> <em>    250 ml &#8212; $3.50        500 ml &#8212; $6.50</em></p>
<p> <strong>Thai Coconut Green Curry Chicken Salad </strong>– And once again a mayo-free sandwich filling option…chunks of moist, tender chicken breast mixed with thai green curry paste, coconut milk, diced sweet peppers, baby corn, &amp; green onions.  Fabulous in a quick wrap but it also rocks heated up on a bed of brown basmati rice.<br /> <em>    250 ml &#8212; $4.00        500 ml &#8212; $7.50</em></p>
<p> <strong>Minted Feta &amp; Watermelon Salad</strong> &#8212; Another in the ranks of ‘sounds weird, tastes great!’ menu selections!  Inspired by a version an online friend made ours combines chunks of seedless watermelon with cubes of low fat feta &amp; cucumber with a light &amp; refreshing vinaigrette of fresh lime, mint, &amp; extra-virgin olive oil.  I love it piled on baby arugula with soft multigrain pita on the side!<br /> <em>    250 ml &#8212; $3.50        500 ml &#8212; $6.50</em></p>
<p> <strong>Tarte of the Week &#8212; <em>Resolutionized Tunisian Lamb</em> </strong>&#8211; The Tunisian Lamb tartes are a huge client fave and as a special request we’re lightening up the filling so it confirms to New Year’s resolutions!  Ground lamb, caramelized onions &amp; red peppers, roasted sweet potatoes, green olives, and whole grain wheatberries with all the wonderful flavours of the original version.<br /> <em>    Deep Dish (4” diameter) Tarte &#8212; $9.00</em></p>
<p> <strong>Spicy Tamarind Mango Chicken Breast </strong>— A tangy tropical taste sensation…boneless chicken breasts marinated in tamarind, ginger, &amp; garlic…slow simmered w/ a sweet’n&#8217;spicy Tamarind Mango Sauce livened up w/ fresh cilantro &amp; a touch of lime.  Served on a bed of Pigeon Pea’n&#8217;Brown Rice Pilaf.<br />  <em>   Single Serving &#8212; $9.50        Double Serving &#8212; $18.50</em></p>
<p> <strong>Indonesian Garlic Chili Eggplant </strong>— A special treat for the eggplant lovers out theret!  Cubes of eggplant lightly coated in a garlic, cardamon, ginger, &amp; sambal oelek glaze, then high heat roasted &amp; combined with lightly stir-fried long beans, baby corn, bamboo shoots, onions, red peppers, ginger, &amp; cilantro, ….served on a bed of steamed long grain brown rice.<br />  <em>   Single Serving &#8212; $8.50        Double Serving &#8212; $16.50</em></p>
<p> <strong>Veracruz Tomatillo &amp; Green Chili Pork Tenderloin Ragout </strong>– On the list this week as a ‘welcome back from vacation’ for one of our favourite seekrit peeps&#8230;generous chunks of roasted cumin &amp; coriander marinated pork tenderloin  simmered w/ tomatilloes, home roasted green chilies, black beans, sweet potatoes, fresh lime, onions, &amp; green peppers.  Served w/ brown basmati rice pilaf.  Olé!<br /> <em>    Single Serving &#8212; $10.50        Double Serving &#8212; $20.50</em></p>
<p> <strong>Old Fashioned Dark Chocolate &amp; Fresh Strawberry Bread Pudding </strong>– Another “But Well, Not…” comfort food dessert…for this one we’ve used whole grain bread and reduced the fat &amp; sugar levels, then added flax &amp; chia seeds for an extra omega boost, and fresh strawberries &amp; 72% dark chocolate chunks for an antioxidant blast &amp; serotonin boost. <p>And Happy New Year!  Hope everyone had a wonderful holiday and are transitioning back to reality smoothly!</p>
<p>If one of your New Year’s resolutions is to eat healthier, or just get back on track after the holidays, we’ve got the perfect selections for you this week.  We’ve focused on soothing comfort foods with maximal nutritional punch to mend your frazzled post-holiday nerves and to help fend off mid-winter colds.  And you can reward your virtuosity with the shockingly healthy ‘<em><strong>Cranberry Pumpkin Gingerbread</strong></em>’ that’s back by special request.</p>

<strong>Persian Pomegranate Red Cabbage Slaw </strong>— In this twist on traditional cole slaw we’re using finely shredded red cabbage rich in anthocyanins (which are responsible for it’s vibrant purple-ositiy) along with fiber, vitamins C, K, A, &amp; B6 and manganese, then we’ve given it an antioxidant blast with pomegranates &amp; fresh lemon and a beta-carotene boost w/ julienned carrots….red onions &amp; zataar round out the flavours and extra virgin olive oil smooths it all out..<br />

<p><strong>Curried CousCous Veronique</strong> – Taking a page from classic French cuisine &amp; warping it a bit this week we have a whole wheat couscous salad given a blast of warmth via madras curry powder and a touch of sweet with multi-coloured seedless grapes…all combined with grated carrots, fresh parsley, &amp; sliced green onions in an apple cider and extra virgin olive oil vinaigrette.<br />

<p>Just a couple of days left of August then we swing into September!  Three sandwich fillings and three salads to make your lunch packing simpler this week, and a new soup, a twist on an old fave, and the much beloved Kale &amp; Shroom Lasagne is back!</p>
<p>Same routine as usual, folks.  Orders in by TUESDAY at 6:00, and pick ups starting THURSDAY at 4:00, and (as usual!) if Thursday isn’t good for you just let me know and we’ll make alternate arrangements.</p>
<p>Hope you managed to stay dry yesterday, and definitely get outside &amp; enjoy the sunshine &amp; glorious weather today!</p>

<p><strong>Quinoa Crunch Pancakes</strong> &#8212; After taking last week off the pancakes are back!  Whole grain flour, flax, chia, hemp, &amp; tri-colour quinoa make these pancakes high in protein &amp; fiber while keeping the fat content waaaaay low.  Lightly sweetened with Quebec maple syrup they’re a perfect start to the day.  For the flavour of the week we’re going with ‘Walnut Pumpkin Spice’ in keeping with the coming of fall.<br />

<p><strong>Vegetarian Borscht</strong> &#8212; It’s been awhile, but it’s back!  Fresh beets, kale, carrots, onions, celery, &amp; tomatoes in our home-made veggie broth with a touch of lemon zest and a *lot* of fresh dill.  One of my fave soups cuz it tastes like home!<br />
<em>   500 ml &#8212; $3.50            1 liter &#8212; $6.50</em></p>
<p><strong>Smoked Ham &amp; Leek w/ Fresh Fava Beans -</strong>- Slow simmered smoked ham, fresh local fava beans, sautéed leeks, carrots, onions, celery, sage, &amp; parsley make this a meal in a bowl.  Add a baguette &amp; quick green salad and you’ve got dinner!<br />
<em>     500 ml &#8212; $3.50            1 liter &#8212; $6.50</em></p>
<p><strong>Lemon Dill Tuna Salad</strong> &#8212; Finely diced celery, green onions, lemon zest + juice, zero fat greek yogurt, and tons of fresh dill combine with tuna in yet another mayo-free sandwich filling that’s perfect for school day lunches.<br />
<em>   250 ml &#8212; $3.50            500 ml &#8212; $6.50</em></p>
<p><strong>Turkish White Bean &amp; Mint</strong> &#8212; Back by special request!  Home-cooked white beans, extra virgin olive oil, garlic, lemon zest + juice, and loads of fresh mint blended into a smooth’n’creamy spread that’s great in wraps or as a dip for fresh veggies &amp; pita crisps.<br />

<p><strong>Chicken Salad w/ Sundried Tomato Pesto</strong> &#8212; And another special request!  Chunks of oven roasted chicken, red &amp; green peppers, red onion, sliced black olives, parsley, &amp; fresh basil gently mixed with our home-made sundried tomato pesto.  Yum!<br />

<p><strong>Couscous Veronique -</strong>- Whole wheat couscous, red onions, fresh parsley, carrots, sweet peppers, and multicoloured grapes in a light’n’lively apple cider vinaigrette.  A fave of one of my fave peeps!<br />

<p><strong>Persian Cucumber Salad</strong> &#8212; Local new crop cucumbers shine in this salad with sumac, green onions, fresh lime zest + juice, halloumi cheese (like feta, but firmer), fresh mint, and zero fat yogurt.<br />

<p><strong>Tex Mex Pinto Beans &amp; Peppers -</strong>- Home-cooked pinto beans, sweet &amp; hot peppers, red onion, corn, celery, &amp; tomatoes with a zippy fresh lime &amp; cilantro dressing.  Great cold and works great as a fast’n’easy filling for enchiladas!<br />

<p><strong>Tarte of the Week &#8212; Moroccan Mergeuz Tagine</strong> &#8212; Grilled merguez sausage, sweet potatoes, onions, chickpeas, carrots, golden raisins, orange zest,&amp; tomatoes slow simmered with our own Moroccan spice blend&#8230;..all the flavours of a traditional tagine in light’n’crispy phyllo!<br />
<em>        Deep Dish (4” diameter) Tarte &#8212; $7.50</em></p>
<p><strong>Vegetarian Kale &amp;  Mushroom Lasagne</strong> &#8212; More than a few people have requested this and with the weather cooling it seems like a perfect week to do it.  Whole grain lasagne sheets layers with our herbed tomato &amp; peppers sauce, grated mozzarella, fresh parmesan, and our creamy &amp; delicious kale &amp; mushroom filling&#8230;.topped with more cheese &amp; baked till bubbly.  Nona would approve!<br />

<p><strong>Provençal Herbed Roast Pork Loin w/ Autumn Veggies -</strong>- Boneless pork loin rubbed with provençal herbes, marinated in red wine, &amp; slow roasted till tender.  Served with roasted sweet potatoes, carrots, zucchini, onions, &amp; sweet peppers.  Fall is in the air!<br />

<p>After a tumultuous few weeks I once again found time to get the pics off the camera, onto the computer, and then finally here&#8230;.starting with last Sunday&#8217;s sushi party at a friend&#8217;s place.  We had all the basic veggies (cukes, peppers, carrots, snopeas, asparagus, mango, mint, cilantro, basil, tomatoes, etc. etc. etc.) along with smoked salmon, smoked tuna, &amp; shrimp.  My plans for having more fresh fish were foiled by Easter Sunday closures of both (!!) Provigo &amp; Metro, but it turned out we had *lots* of everything for everyone!  We rounded out the menu with traditional edamame and crispy chicken &amp; cabbage dumplings&#8230;.along with beer, wine, &amp; sake, of course!  Much fun was had by the sushi novices who totally rocked at rolling.</p>

			<content:encoded><![CDATA[<p>So it seems like Sunday evenings are turning into &#8216;cook-whatever-I-happen-to-feel-like-and-invite-a-friend-(or-two)-to-hang-out-while-I-prep&#8217; evenings.</p>
<p>Last week was the rockin&#8217; capicolla, lemon,  &amp; fresh sage chicken&#8230;this week it was supposed (emphasis on &#8216;supposed&#8217;) to be a very traditional roast beef dinner.</p>
<p>Until I encountered some gorgeous blue potatoes, and perfect sweet potatoes.  At which point everything went south, in a good way (of course!)</p>
<p>Had the roast ready to go, but decided to smear it w/ a spice rub of chipotle peppers, cloves, coriander, &amp; fresh lime zest + juice.  And of course, made waaaay too much of the spice rub&#8230;so spiral cut &amp; slashed the beef, spread the spice rub all over, rolled it up, tied it tight, spread the rest of the rub over the outside but was a wee bit unhappy w/ how it looked.</p>
<p>Rummaged around in the cupboards and decided to continue w/ the south of the border theme started by those darned chipotles and rolled the spiced rubbed roast in red whole quinoa seeds.  Pre-heated my ever faithful cast iron skillet, tossed the chunked blue &amp; sweet potatoes w/ grapeseed oil, cinnamon, black pepper, &amp; ground coriander, made a nest, &amp; snuggled the quinoa coated roast into the middle.</p>
<p>Cranked the oven to 500°, waited oh-so-impatiently for the little red light to go off, put the skillet in, dropped the heat down to 300° &amp; went home to change.</p>
<p>Got back to the kitchen &amp; started playing w/ the salad.  I knew I wanted to use baby arugula, and mango, but wasn&#8217;t sure of what all else.  Finally decided on ribbons of golden sweet mangoes, julienned red peppers, shredded shiso leaves, toasted almonds, fresh lime juice, extra virg olive oil, and a touch of sea salt.  Mixed it all together w/ a bit of organic apple cider vinegar &amp; let it sit.  Added the mango mix to baby arugula, tossed it, piled it into bowls, and we dug in.</p>

<p>While that was being devoured I did a quick mix of light feta, oregano, lemon zest, extra virg olive oil, &amp; rough chopped kalamata olives, spread it on split ciabatta baguettes, ran it under the broiler till toasty, drizzled them w/ a little more extra virg olive oil, then sliced them into &#8216;fingers&#8217; that we snacked on while the beef was resting.</p>
<p>And it was soooo cool how the quinoa seeds that slipped off the roast cooked in the beef juices mixed w/ the chipotle &amp; lime&#8230;mmmmmmmm.  Mixed&#8217;em all in w/ the blue &amp; sweet potatoes (blue were a bit of a disappointment cuz they went a little grey&#8230;but still tasted great!) and served the sliced beef on a bed of the potatoes/quinoa w/ a drizzle of juices &amp; cooked quinoa seeds over top.</p>

			<content:encoded><![CDATA[<p>A friend is coming to the kitchen tonight for dinner and I have the BEST.EVER. roast chicken in the oven now.  Had a dream (or maybe nightmare!) about making veal saltimbocco for a huge party and when I woke up thought that it was a sign from my psyche about what to do for dinner.</p>
<p>Gently loosened the skin on a lovely grain fed air chilled whole chicken and slipped slices of spicy  capicolla inbetween flesh &amp; skin w/ fresh sage leaves on top of the capicolla.  Poked a whole lemon a bazillion times w/ a fork then tucked it into the cavity along with the sage stems &amp; little leaves &amp; tied the wee bird shut w/ butcher&#8217;s twine.  Drizzled grapeseed oil over the sweet little bird and nestled it into a bed of mushrooms, Yukon gold grelots, carrots, celery, &amp; sweet potatoes tossed w/ fresh ground  pepper, more sage, &amp; more grapeseed oil in my big old cast iron frying pan.  Popped the whole deal into a 500° oven, dropped the heat down to 325°, and am totally resisting the urge to take a peek at it!  Twenty  minutes before serving I&#8217;ll slip the chicken out to let it rest, and add fresh asparagus to the veggies, crank up the heat and let&#8217;em all roast till perfectly browned.</p>
<p>To go with we&#8217;ll have a fresh baby greens salad w/ rice vinegar marinated red cabbage &amp; sweet yellow peppers, balaadi cukes, vine-ripened tomatoes, and a &#8216;San Marino&#8217; mix of lettuces &amp; herbs&#8230;.drizzle of olive oil &amp; we&#8217;re done.</p>
<p>Dessert is utter simplicity of dark chocolate dipped strawberries w/ toasted almonds &amp; sea salt, and caramel crunch milk chocolate dipped strawberries w/ skorr chips.</p>
<p>Heading back over to do prep for tomorrow&#8217;s soups now&#8230;and to await my dinner guest!</p>

<p>A gorgeous, sunny Sunday!  Heading to the mountain for a nice long run this afternoon w/ fingers crossed that the trail will (finally!) be clear of wet slushy iciness.</p>
<p>A fun menu this week with a few special requests fulfilled (those ham &amp; onion tartes are back!), a couple of new things, a few old faves, and a never-been-done-before repeat of one of last week&#8217;s menu choices since somebody very special requested it.</p>
<p>Same routine as usual, folks!  Orders in by 6:00 on TUESDAY and pick-ups starting THURSDAY @ 4:00.  And (also as usual!) if Thursday isn&#8217;t good for you just let me know and we&#8217;ll make alternate arrangements.</p>

<p><strong>Fuss Free Fast&#8217;n'Easy Quinoa Crunch Pancakes -</strong>- Our whole grain pancakes are very lightly sweetened with Quebec maple syrup and have chia, hemp, buckwheat, &amp; flax added for a nutritional boost &amp; are given an extra flavourful protein packed crunch with tri-colour organic quinoa.  For the flavour of the week we&#8217;re going with a sweet &amp; tangy combo of cranberries &amp; currants.<br />

<p><strong>Veracruz Chicken &amp; Tortilla Soup </strong>&#8211; By special request!  Crispy oven &#8216;fried&#8217; julienned white corn tortilla strips to top our homemade crazy-rich defatted chicken broth swimming with chunks of tender chicken, tomatilloes, sweet &amp; hot peppers, onions, fresh coriander, roasted green chilies, &amp; black beans.  Tortilla strips sent separately so they keep their crunch!  Just heat up your soup and add them when ready to serve.<br />

<p><strong>&#8220;Cream&#8221; of Asparagus Soup</strong> &#8211;  Perfectly simple and perfectly delicious!  Thin sliced tender fresh asparagus added to our home-made veggie broth lightly thickened with whole grain flour &amp; enhanced w/ puréed asparagus &amp; fresh dill for a double hit of springtime flavour!  Extra thick zero fat Greek yogurt swirled in for a creamy finish.  Got lactose issues? Just let me know, not a problem to leave the yogurt out of yours!<br />

<p><strong>Maple Cranberry Old Fashioned Bread Pudding</strong> &#8212; Another &#8220;But Well, Not&#8230;&#8221; comfort food dessert&#8230;for this one we&#8217;ve used whole grain bread and reduced the fat &amp; sugar levels then added flax &amp; chia seeds for an extra omega boost, Quebec maple syrup for flavour (and selenium!) and antioxidant packed tangy sweet dried cranberries.  Great warmed up for dessert and a wonderful treat for breakfast as well!<br />

<p>A NOTE FOR THE NEWBIES!</p>
<p>We&#8217;re thrilled to have had an influx of &#8216;newbies&#8217; to the list over the past few weeks and this is just to let all of you know that if there&#8217;s something you don&#8217;t like, or have dietary issues with, to let me know!  Most of the time it&#8217;s not a problem at all to tweak the recipes so that they&#8217;re not spicy (or so that they&#8217;re extra spicy!), or have no lactose, or to leave the broccoli out, or whatever your issue may be; so please don&#8217;t be shy!!  We&#8217;re also more than happy to take requests so if there&#8217;s anything you&#8217;ve been craving or would like to see &#8216;healthified&#8217; just let me know!</p>

			<content:encoded><![CDATA[<p>Had a wonderful time at the party last night, met a whole bunch of amazing new friends, totally enjoyed relaxing &amp; actually socializing instead of working the whole time!   I had heard about the party earlier in the week but didn&#8217;t find out until Friday just whose birthday it was&#8230;and when I did find out the first thing I did was explore the fridges &amp; pantry at the kitchen to see what I could throw together with only 24 hrs (more or less) notice.  Here&#8217;s what we ended up with!</p>
