Creamy Cauliflower & Potato with Smoked Cheddar — Often overlooked cauliflower is a powerhouse of nutrition in it’s own right (in one serving it has 77 percent of the recommended daily value of vitamin C. It’s also a good source of vitamin K, protein, thiamin, riboflavin, niacin, magnesium, phosphorus, firer, vitamin B6, folate, pantothenic acid, potassium, and manganese) and we’re teaming it up with red potatoes that pack their own nutritional punch with fibre, B vitamins, potassium, and iron in their colourful skins. Simmered in our veggie broth, lightly thickened with whole grain flour, given a protein boost via Greek yogurt and a fancy, flavourful finish of grated smoked cheddar to wrap it all up with fresh rosemary bringing a serene green finish with it’s own antioxidant rosmarinic acid that also helps detoxify your system.
