Seekrit List — 06/03/11

Greetings!

Well, I don’t know about anybody else but *I’m* ready for warm weather!  On the bright side we get to ‘spring forward’ next weekend, and then it’s just a few more days till spring! (well, calendar spring at least!)

A few new things on this week’s menu, starting w/ a ‘Lemongrass White Miso Soup w/ Green Tea Noodles‘ (partly inspired by a recipe my Aunt Shirley sent awhile ago, and by an exploratory food-finding trip to Chinatown where I stumbled on the green tea noodles), a new tarte (combining two old faves), a new twist on the ever popular pork loin roasts, and speaking of twists, a new variation on ‘rollatinis’ as well!  ‘Lavender Lemon Whole Grain Tea Biscuits‘ make their annual spring-time appearance, along with ‘Honey Vanilla Berry Medley‘ to build your own berry shortcakes! (Try using zero fat Greek yogurt instead of whipped cream!)

Same routine as usual, folks, with orders in by TUESDAY @ 6:00 and pick-ups starting THURSDAY @ 4:00, and (as usual!) if Thursday isn’t good for you just let me know and we’ll make alternate arrangements.  And if you’re one of the many ‘seekrit’ peeps who are traveling right now and you see something you *love* on the list we’re more than happy to pop it in the freezer to await your return!

Fuss Free Fast’n’Easy Quinoa Crunch Pancakes — Our whole grain pancakes are very lightly sweetened with Quebec maple syrup and have chia, hemp, buckwheat, & flax added for a nutritional boost & are given an extra flavourful protein packed crunch with tri-colour organic quinoa.  For the flavour of the week we’re going with a tropical blast of ‘Toasted Coconut &  Mango’.

Lemongrass White Miso Soup w/ Green Tea Vermicelli — A delicate lemongrass scented white miso & green tea broth with a chiffonade of pan-asian veggies, toasted sesame seeds, and green tea vermicelli.  Enjoy the antioxidant, vitamin, & enzyme packed soup as it is, or pump up the protein with tofu, shrimp, or chicken!

Italian Wedding Soup — Crazy popular whenever we run it; this time we’re mixing it up a bit by adding extra lean ground beef to the lean’n’mean turkey meatballs for an extra flavourful protein punch!   We’ve taken the classic version and ‘health-ified’ it by using finely shredded kale as well as the traditional spinach, onions, celery, carrots, & mini-pasta in our herbed tomato vegetable broth along with parsley & fresh basil for a sweet summer-y flavour.  Definitely a meal-in-a-bowl!

Cuban Black Bean & Sweet Potato Soup — A hearty tropical soup with our home-cooked black beans, diced sweet potatoes, peppers, carrots, celery, & onions in our made-from-scratch veggie broth enlivened with our Cuban mojo spice blend and a dash of fresh citrus zest & juice.  A warm-your-bones soup for these last (hopefully few!) frigid days of winter!

Zesty Lemon Dill Tuna Salad –– Chunks of water-packed tuna combined with minced fresh dill, fresh lemon zest + juice, finely diced celery, green onions, low fat yogurt and just a touch of mayo…my fave of all the tuna salads we do!

Incan Veggie Pâté — Very lightly toasted pumpkin & sunflower seeds combined with beta-carotene packed roasted sweet potatoes, organic tri-colour quinoa, finely shredded kale, hemp, flax, & chia seeds, kasha, onions and herbes then baked till firm.  Complete proteins, healthy fats, complex carbs, beta-carotene, fiber, all that dark green kale-y goodness, and it tastes great too!  Wonderful spread on a whole grain tortilla for a quick wrap with some grated carrots & sprouts.

Moroccan Spicy Orange, Olive, & Couscous Salad –– Back by special request!  Chunks of sweet & juicy navel oranges combined with a spicy hit of harissa, red onions, black & green olives, steamed whole wheat couscous, wheatberries, parsley, extra virgin olive oil, & our own Moroccan spice blend.

“Tarte” of the Week — Cheesy Scalloped Potato & Smoked Ham — Giving the phyllo a bit of a break this week & using thin sliced skin on potatoes as a ‘nest’ for layers of smoked ham, cheddar cheese, sliced sweet onions, & our low-fat herbed ‘cream’ sauce before baking till golden & bubbly.  Two requests in one tarte this week!

Andalucian Seafood & Basa Fillet Ragout — Delicate basa fillets, shrimp, scallops, calamari, & mussels in an anise & citrus scented tomato & peppers sauce with a touch of Pernod, served with ‘Paella Pilaf‘ made with long grain brown rice, petit pois, & saffron.  The classic Provençal bouillabaisse meets Spanish paella for another fish lovers’ fantasy fulfillment!

Herbed Chevre & Kale Whole Grain Rollatini — Tangy herbed chevre with garlic sautéed finely shredded kale & onions spread on whole grain pasta & rolled up into little bundles of joyful flavour nestled into a bed of fresh basil pesto & tomato sauce then baked till tender.  Something new for my beloved vegetarians!

Spiced Cider Pork Loin ‘Rouladen’ with Maple Glazed Apple & Cheddar Stuffing –– Boneless pork loin roasts spiral cut, marinated in spiced Quebec cider, then filled with maple glazed apples, herbed multigrain bread, sautéed onions, & grated cheddar cheese before being rolled up, tied, and baked till tender.  Served on a bed of brown rice pilaf with an ‘Herbed Cider Sauce‘ made of the pan drippings.  If we can do it with beef why not pork?!

Lemon Lavender Whole Grain Tea Biscuits — Classic tea biscuits ‘healthed up’ by using whole grain flour, golden flax, & just a touch of honey combined with lavender infused low fat milk, organic lemon balm tea, & tons of fresh lemon zest.  And they’re *perfect* for individual berry shortcakes so we’re offering those as well to make your life simpler!

Seekrit List Alert — 23/01/11

Greetings!

The coldest day of the year so far has inspired more hearty, healthy, comforting choices this week, along with a few tropical options so you can *feel* like you’re down south somewhere, even if you’re not!

The ‘Happy’n’Harmonious’ is back again this week by special request with ‘Dates & Toasted Hazelnuts’ as the flavour this time around!  Berry studded quinoa crunch pancakes, soup to say ‘olé!’ to, sunny Moroccan flavours for one salad, and one of last summer’s faves for the other.  A variation on the much beloved ‘Smoked Ham & Caramelized Onion’ tarte, soul soothing ‘Whole Grain Barley Risotto’, spicy Cuban chicken’n’ribs, and a new dessert finishes it all off!

We help with that by using beta carotene (and fiber!) packed pumpkin to further cut the calories, and maple syrup for it’s sweet smooth flavour (and it’s selenium!)  Nestled in a ginger spiked whole grain ‘crumble’ crust w/ flax & chia added for an omega boost, topped with the whole grain crisp topping you know & love, and baked till firm.  A twist on the usual phyllo crust cheesecakes we do!

Chicken & Keffir Lime Udon Noodle Soup — Udon noodles, snow peas, sprouts, carrots, baby corn, chicken, chinese cabbage, & green onions in our home-made chicken broth infused with keffir lime leaves, fresh lemongrass, thai green chilies, & ginger then enriched with a touch of red miso.  A twist on traditional chicken noodle soup that’s just as good for mid-winter colds!

“Cream” of Roasted Garlic & Zucchini —  Mellow slow roasted garlic blended w/ shredded zucchini, Italian parsley, & fresh basil in our home-made veggie broth lightly thickened w/ puréed skin-on potatoes & given a velvety tang with light sour cream.  Full flavoured & fat free, what’s not to love?

Mushroom Barley Miso Soup –– Slow sautéed cremini, white, & portabella mushrooms simmered with julienned shiitakes & whole grain barley in our home-made veggie broth enriched at the last minute with red miso, and given a kick w/ shredded fresh ginger & a touch of ‘rooster’ sauce.

Spicy Cilantro Chicken Salad — Chunks of high protein low fat chicken gently mixed with fine diced celery, spanish onion, fresh cilantro, lime zest + juice, roasted green chilies, and just a touch of mayo (light of course!) to hold it all together.  Great as a filling for whole grain tortillas!

Roasted Butternut Squash Hommus — A fave variation on the ever-popular hommus, this one with the calories cut and the betacarotene boosted with high heat roasted fresh butternut squash added to our home-cooked chickpeas along with the traditional tahini, garlic, fresh lemon zest + juice, parsley, and extra virgin olive oil.

Jitterbug Beet Salad — Beets are yet another powerhouse of nutrition with high levels of potassium, iron, manganese, fiber, folate, AND vitamin C.  Steamed fresh beets, julienned red onion, fresh navel orange chunks, & sweet green peppers in a fresh dill & white balsamic vinaigrette combined in a crazy good for you salad!  Pump up the nutrition even more by having it on a bed of baby spinach.

Black Bean & Chipotle Tamale Pies — A special request from our biggest tarte fan ever…spicy slow cooked black beans with caramelized onions, roasted red & green peppers, light cheddar, & chipotles w/ our own texmex seasoning blend all encased in whole grain corn tamale ‘dough’, topped w/ more light cheddar, & baked.  Hot peppers rev up the metabolism, the beans/corn/cheese provide complete proteins, and the sweet peppers toss their vitamin packed selves into the ring.  Spicy warmth to chase away the first of the winter chills!

Garlic Thyme Roasted Pork Loin-– Boneless center cut pork loin marinated in red wine w/ thyme, roasted garlic, parsley, & fresh ground pepper, seared, then slow roasted till tender. Served on a bed of “Garlic Herb Roasted Potatoes’ with a rich “Mushroom Miso Gravy” that’s surprisingly low fat and (not surprisingly) yummy.  Comfort food at it’s finest!

Butternut Dumplings with Herbed White Bean & Kale Ragout — A bit of a change from our usual whole grain dumplings these have roasted butternut squash added for an extra betacarotene (and flavour!) blast.  Served on our fat free ragout of finely shredded fresh kale, our home-cooked white beans, sweet peppers, tomatoes, fresh herbes, & spanish onions.

Fresh Blueberry Lemon Poppyseed Pudding Cake — Fresh sweet blueberries blanketed with tangy lemon poppyseed batter that we’ve (of course!) healthed up with whole grain flour, flax, hemp, buckwheat, & chia, all topped w/ a honey’d fresh lemon sauce & baked till golden…a sweet treat that’s totally guilt free!

Picante Gingersnaps — The classic spicy gingersnap given an extra ‘snap’ with the addition of crystallized ginger & a touch of smoky chipolte peppers!  As usual we’ve ‘healthed’ them up, this time by using whole grain flour, flax & chia seeds, the minimum amount of dark demerara sugar, and blackstrap molasses for an extra iron boost in the midst of cold season.

Walkin’ the Walk

Super healthy eating the past couple of days.  I’ve been cleaning up my eating choices a bit and really focusing on getting the maximum ‘fueling’ with the minimal amount of calories.  I tend not to eat ‘real’ meals but a little bit of this, a little bit of that instead, and I’m trying to break that habit and start eating actual meals off of actual plates with actual cutlery.  Today was a good day…or at least so far!

Pre-Run:  Three fried eggs (only two yolks tho’) with multigrain toast & organic almond butter.  Large pot of coffee w/ 2% milk, big glass of half water, half Oasis peach/clementine juice.

During Run:  Iced green tea w/ Cytomax + Monster Energy drink + honey.

Post-Run “Snack” (eaten w/in 15 min of finishing for max metabolic boost, muscle healing, & glycogen replacement):  Handful of raw almonds, half a pear, 1 1/2 bananas, two slices organic three grain bread (Ynew sourdough…mmmmm), 1/2 cup 2% cottage cheese, liter of 1% chocolate milk.

Post-Run Meal: BIG bowl of frisée lettuce ‘fettucine’ with crumbled cold chicken burger, extra virgin olive oil, coarse sea salt, & veggie mix of cukes, tomatoes, carrots, red cabbage, red/yellow peppers, & celery.  Added a big handful of Chia Goodness (mix of hemp, chia, & buckwheat) at the last minute for extra omega boost-age + crunchiness.  Liter of cold water, liter of iced green tea w/ fresh lime & honey.

Dessert:  Strawberries dipped in caramel 1.5% yogurt, Camino 71% dark chocolate w/ almonds & cranberries, last of the pot of coffee from this morning mixed w/ a splash of cold sugar-free chocolate almond milk.

Now, those cold chicken burgers….yesterday I made up a batch of chicken meatballs and there was a bit leftover (not all the meatballs fit on the baking sheet) so I turned it into burgers that I pan-fried in, um, bacon fat.  Nibbled on them last night then stashed the rest in the fridge & didn’t want to take the time to heat them up today so crumbled them into my salad.  The chicken meatball/meatloaf/burger mix is one of my fave adaptations of classic not so much the good for you meatballs.  Here’s the (rough) recipe for them if you’d like to make them yourself, or you can always order them from me!

I used extra lean ground chicken this time but the same technique works great w/ any ground meat.  When I’m not avoiding eating creatures w/ four legs I like to mix ground beef  in w/ the ground chicken for an extra flavour boost, and when I’m not avoiding the caloric fat whammy of sausages spicy Italian sausage (taken out of the casings) is great mixed w/ just about any other ground meat.

The veggies add moisture, along w/ fiber & all those good vitamins etc, and, of course, flavour.  The ones I used yesterday were random what was in the fridge/on hand choices but you can use pretty much anything.  I generally stick w/ carrots, onions, celery, shrooms, & something dark green but butternut squash, zucchini, fennel, sweet potatoes, & peppers have all found their way into the recipe at one time or another.

To cut the fat levels still further, and to add fiber, complex carbs, & B vitamins, I add a mix of whole grain oats + seven grain flakes that I give a quick bzzzzzzt to in the cuisinart.  Egg whites give an extra protein boost and act as a binder for the whole shebang and the chia goodness mix adds a healthy wallop of omegas.

For seasoning yesterday I used a bit of garlic, basil, oregano, parsley, & parmesan though you can go w/ classic roast chicken spices (parsley, sage, rosemary, & thyme) or some grated fresh ginger, sesame oil, hot sauce, & a touch of soy sauce or miso, or go Moroccan with grated clementine zest, cumin, coriander, & cinnamon, or go Mexican w/ cumin, paprika, chipotles, & oregano….the possibilities are endless!

* 1 kilo ground meat (extra lean chicken, turkey, beef, veal, or pork)

* 2 large carrots, 3 or 4 stalks of celery, 1 big onion, 8 oz sliced shrooms, 1 bunch fresh spinach (arugula is great in these too, as is kale)

* 2 tbsp extra virgin olive oil (melted bacon fat adds a wonderful flavour but isn’t *quite* as good for you…lol)

* 4 egg whites

* 1/2 cup chia goodness (mix of hemp, chia, & buckwheat

* 1/2 cup large flake whole grain oats

* 1/2 cup seven grain flakes (like oatmeal but, well, not)

* seasonings as you wish

Pre-heat a medium sized pot (with tight fitting lid) and add olive oil.  When oil is shimmering toss in the veggies (they can be cut pretty roughly since they’re going into the cuisinart once they’re cooked.)  Stir well to coat all veggies w/ olive oil then put the lid on & reduce heat to medium low.  Cook, stirring occasionally, until veggies are tender.  Add seasonings & remove from heat to cool a bit.

Meanwhile place the oats & seven grain flakes in the cuisinart and pulse till not quite flour.  Add sautéed veggies, egg whites, & chia goodness then process till not quite smooth but not too chunky either.  Add to ground meat and gently mix till well blended.  Let sit for a bit (over night is best but even half an hour is okay.)

Form into golf-ball sized (or miniature bite sized) meatballs & place on a lightly greasted or parchement’ed baking sheet.  Put into a pre-heated 450° oven and immediately drop heat to 350°.  Bake until cooked through & lightly browned…timing will depend on size of meatballs but about 20 min for golf-ball sized ones is pretty good.  Add to sauce  & serve on whole grain pasta, or use however you like to use meatballs.

For burgers just shape into burgers instead of balls, and for meatloaf just place in loaf pan & bake instead of forming into burgers or balls.

Quick Post Run Meal

Got in from running today (just a quick hour in the freezing sleet…ugh) and wanted something quick with what was on hand.  Cut a few potatoes into wedges & threw them in a hot pan w/ a drizzle of olive oil.  While they started to sizzle I cut a red pepper & a few handfuls of green beans into 2″ pieces and tossed them in.  Added a bit of sea salt, pepper, & dried basil then popped it in a hot oven to roast.  As they roasted I coated chicken breasts in basil, black pepper, & a bit of cornmeal then browned them off & put them on top of the veggies in the oven.  Once everything was cooked I stirred in a big spoonful of the sundried tomato tapenade and a bit of water to make a ‘sauce’ for it all, sliced the chicken into strips, mixed it all together and was done!  Easily three meals worth in under 30 minutes, full of lycopenes, high protein, nice carb/protein ration,  & low fat to boot.  Would be really simple to convert to a vegetarian dish by just leaving out the chicken & using white cannelli beans instead.

And if you’re *really* short on time you could use frozen mixed pepper strips, pre-trimmed green beans, & pre-cooked chicken breast strips.  Would also be really good with a spoonful or two of jarred pesto (either traditional or sundried tomato) instead of the tapenade.

Faux Pho — Made this a few weeks back for myself & a couple of friends and when seekrit peeps found out, well, they wanted it too.  Our keffir lime leaf, ginger, & lemongrass seasoned home-made veggie broth with baby bok choy, shiitake mushrooms, carrots, snow peas, & baby corn…rice noodles, spring onions, bean sprouts, fresh basil, thai chilies, & lime wedges sent on the side for you to add at the last minute to the heated broth.  Not quite ‘real’ pho, but a fabulous faux pho none-the-less!  Prefer yours with beef or chicken?  Add thawed slices of chinese fondue meat for a quick protein punch.

Wow, end of September already…where does the time go??  And being the end of September of course I’m thinking about Thanksgiving & what we’re going to offer this year.  Last year we had all the assorted ‘sides’ such as our Roasted Garlic Mashed Potatoes, Green Beans w/ Wild Mushrooms, Baked Butternut Squash, & Classic Herbed Bread Stuffing.  I’ve had a few people ask about whether we’ll do entire turkeys this year and the answer would be ‘yes’, IF they’re pre-ordered.  Details to follow in next week’s list but please feel free to ask me about it before then if you’d like!

This week we’re all over the map again with a couple of perfectly classic soups, a new whole wheat cous cous salad, baba ghanouj (for the first time!), a hearty steak & wild mushroom tarte, and ribs are back since y’all were so enthusiastic last time.  Two selections will be “Swingin’ Both Ways” this week; the Shepherds’ Pie and the Classic Apple Crisp (or Tarte.)

Not quite such a crazy week in the kitchen but please (pretty pretty please!) make sure your order is in by TUESDAY @ 6:00, it helps my life immeasurably to have the right numbers Tuesday evening so I can dive into the prep & shopping first thing Wednesday morning.  Pickups starting at 4:00 THURSDAY and (as usual!) if Thursday doesn’t work for you just lemme know and we’ll make alternate arrangements.

Triple Lentil Veggie Soup
— I’ve been craving this for weeks now but other requests kept bumping it to the bottom of the pile, this week tho’ it’s *my* turn!  Teensy dark brown du Puys lentils & little green lentils with big brown lentils simmered in our home-made veggie broth with carrots, onions, celery, fresh corn, tomatoes, mushrooms, zucchini, petit pois, & green beans…all lightly seasoned w/ fresh herbes.  Classic, simple, and perfect!  Have it with some crusty whole grain bread to complete the proteins and add a quick green salad for an ‘insta-dinner.’

Happy & Harmonious ‘How To’ and Hints

My enthusiasm for this stuff knows no bounds.  Yesterday I had a chance to have a bowl as a pre-run meal to test out it’s ‘fuel’ quotient and it totally rocked my world.  I added extra honey (quick carbs), almonds (more fiber/protein/healthy fats), and had it w/ plain low fat yogurt (protein/calcium) and a sliced banana (carbs/potatssium.)  Definitely enough to power me through two hrs of trail running etc.

While I was eating it i was thinking tho’ that, while amazingly good for me and teh yum as well, it still packs quite a caloric punch.  Great if you’re going off for a long run, but  maybe not so great for breakfast on a regular day, so I picked up a box of (generic) all bran and today had it mixed half’n’half w/ the happy & harmonious.  Just as yummy, and cuts the cost of the portion as well!

Several people have asked how to cook the hot version of it so just in case you’re wondering too here’s what I’ve been sending out:

The basic method is the same as for ‘regular’ oatmeal.  For one generous portion take a cup of water (or milk, or soy milk etc) and bring to a boil, either in a small saucepan on the stove-top or a micro-safe bowl in the microwave.  Then add a scant 1/2 cup of ‘happy & harmonious’, reduce heat to low (if on stove-top), stir well, stick the lid on, and wait about 10 minutes (for stove-top)   For microwave cook on med heat for about four minutes, then add time in :15 chunks till  you get the consistency you like.  Basically either of these methods gives you a porridge that’s nice & thick and a bit ‘al dente’, for a softer, creamier version add a little extra liquid and cook a little bit  longer.   Trust me, it’s easier to add a little extra liquid to make it thinner than to add a little extra cereal to make it thicker, just stir it in a bit at a time till the porridge has the consistency you like.  (And note that it *will* thicken up as it cools, same as regular oatmeal does.)

You can also cook it in a small rice cooker (or a large one if you really need 3 liters of porridge.)  Use a little extra liquid than the stove-top/microwave version, put cereal + liquid in rice cooker, close the lid, wait for the little light to go off, & you’re done.

Crockpots also work wonderfully, just follow the same proportions as for stove-top & microwave, stir well, then put the lid on and cook on low for a couple of hours, or high for a shorter time.  (Sorry, it’s really hard to recommend times for slow cookers since the heat level varies so dramatically with them.  Use your better judgement…if your cooker does the usual stuff really fast then it’s gonna cook porridge really fast too, ditto for the reverse.)

I also discovered (somewhat by accident) that the leftover thicker/al dente porridge makes lovely hefty ‘pancakes’ if sliced & sautéed in a non-stick frying pan.  I have no micro at home so was re-heating a slab of leftover gingered apricot date in the frying pan, got distracted, came back several minutes later expecting to find an inedible mess and instead was greeted w/ a crisp, lightly caramelized crust on the bottom.  Flipped it over & let that side brown…then drizzled a little maple syrup on top…highly recommended.

For the coming week I’ve been going back’n’forth between several flavour possibilities but have finally decided on doing a tropical version w/ dried mango, toasted unsweetened coconut, crushed banana ‘chips’, and macadamias.  We’ll be sticking with the ‘base’ grains & seeds just the way they are right now, I’m happy w/ the nutritional balance & the flavour/texture of it all.

Some of the ‘flavor of the week’ add-ins I’ve been thinking about using are (listed in no particular order):

Nuts: Hazelnuts, almonds, pecans, walnuts, peanuts, sunflower seeds, pumpkin seeds

Dried Fruits: Pears, raisins (thompson, currant, & golden), apricots, dates, strawberries, mango, pineapple, banana (chips), ginger, cranberries, cherries…possiblilites are endless!

Died & Gone to Heaven Post-Run “Shake”

I’m finding that the last half hour of my training is taken up by fantasies of what I’m going to have for my post-run meal.  I think about what’s on hand in the kitchen, and start putting together whatever-it’s-going-to-be in my head, adding stuff, taking away stuff, visualizing the whole order of what I’ll do when.  Hey, it keeps my mind occupied and I don’t notice the last couple of miles at all.

Today my mind was focused (quite sharply!) on something sweet, anything sweet.  I knew I had some of the Nature’s Path Maple Pecan Crunch (mmmmmmmm) but I also knew I had no milk, so that was out.  There are (or were) frozen bananas & strawberries tho’, and chocolate almond milk, and vanilla yogurt, and cocoa powder, and unflavoured whey so as soon as I hit the kitchen I grabbed two of the bananas and a chunk of the frozen berries, then stuck them in the micro on defrost for a minute or so.

While I was waiting for that I poured about a cup of chocolate almond milk into the food processor bowl (no blender, alas) with an equal amount of zero fat vanilla yogurt, a scoop of whey powder, a scoop of cocoa powder, and about a quarter cup of “Chia Goodness” (chia, hemp, & buckwheat) and gave it a quick bzzt to blend.  Add the still very frozen bananas’n’berries & hit the on button till it was smooth, then scooped it out into a bowl.

No shake this lemmetellya.  This, THIS!, was a bowl of what tasted like chocolate ice cream w/ a hint of banana to it and a wonderful, satisfying crunchiness from the “Chia Goodness”, and a light berry flavour floating underneath it all.  Would DEFINITELY do this again!!

Wonderfully filling, protein & potassium packed, complex carbs, omegas, antioxidants, and did I mention how amazing it tasted??  I’m heading back over to grab the little bit that was leftover for a bed-time snack.
