Mango Miso Soba Noodle Salad w/ Wakame, and other ‘Seekrits’

Greetings!

A gorgeous, sunny Sunday!  Heading to the mountain for a nice long run this afternoon w/ fingers crossed that the trail will (finally!) be clear of wet slushy iciness.

A fun menu this week with a few special requests fulfilled (those ham & onion tartes are back!), a couple of new things, a few old faves, and a never-been-done-before repeat of one of last week’s menu choices since somebody very special requested it.

Same routine as usual, folks!  Orders in by 6:00 on TUESDAY and pick-ups starting THURSDAY @ 4:00.  And (also as usual!) if Thursday isn’t good for you just let me know and we’ll make alternate arrangements.

Fuss Free Fast’n’Easy Quinoa Crunch Pancakes –– Our whole grain pancakes are very lightly sweetened with Quebec maple syrup and have chia, hemp, buckwheat, & flax added for a nutritional boost & are given an extra flavourful protein packed crunch with tri-colour organic quinoa.  For the flavour of the week we’re going with a sweet & tangy combo of cranberries & currants.

Veracruz Chicken & Tortilla Soup — By special request!  Crispy oven ‘fried’ julienned white corn tortilla strips to top our homemade crazy-rich defatted chicken broth swimming with chunks of tender chicken, tomatilloes, sweet & hot peppers, onions, fresh coriander, roasted green chilies, & black beans.  Tortilla strips sent separately so they keep their crunch!  Just heat up your soup and add them when ready to serve.

“Cream” of Asparagus Soup —  Perfectly simple and perfectly delicious!  Thin sliced tender fresh asparagus added to our home-made veggie broth lightly thickened with whole grain flour & enhanced w/ puréed asparagus & fresh dill for a double hit of springtime flavour!  Extra thick zero fat Greek yogurt swirled in for a creamy finish.  Got lactose issues? Just let me know, not a problem to leave the yogurt out of yours!

Classic (But, Well, Not) Split Pea Soup w/ Smoked Ham –– Split yellow peas slow simmered with whole grain barley in our home-made (de-fatted!) smoky herbed ham broth with onions, celery, carrots, & tender chunks of smoked ham.  Exactly what I want on this sunny (but chilly!) day.

Dilled Potato Salad w/ Fresh Lime — A mayo-free twist on potato salad with tender cubes of simmered potatoes, celery, green onions, petit pois, & green peppers tossed with fresh dill, lime zest + juice, and a touch of canola oil.  A taste of summer picnics to come!

Curried Carrot & Red Lentil Dip/Spread w/ Sweet Potatoes & Pistachios — Another veggie based dip/spread, this time featuring betacarotene packed carrots & sweet potatoes with the earthy, protein packed flavour of teensy red lentils & the crunch of toasted pistachio nuts, all rounded out w/ sautéed onions & red peppers.  Great w/ fresh veggies or spread on whole grain naan for a healthy lunch box option.

Peach’n’Passion Glazed Chicken — Bone in, de-skinned chicken pieces marinated in fresh lime & ginger spiked passionfruit nectar, then basted with a peach’n’passionfruit glaze while being high heat roasted.  Sweet, tangy, & tender!  Served on a bed of baby arugula and ‘Cranberry Almond Whole Wheat Couscous.’

Mediterranean White Bean Ragout w/  Spaghetti Squash — Swinging through the Straits of Gilbraltar to the warm & sunny Mediterranean for this vegetarian main dish…tender beta-carotene packed strands of baked spaghetti squash with a ragout of cannelli beans, sweet onions, multi-coloured peppers, tomatoes, & fresh herbes topped with crumbled feta, Italian parsley, & sliced kalamata olives.

Green Tea & Wasabi Sesame Seared Tilapia — Fresh tilapia lightly coated with a matcha green tea & wasabi oil, rolled in black & white sesame seeds, then high heat seared…served on a bed of “Gingered Black Rice” with a mix of lightly stir fried pan-asian veggies.  A twist on the salmon you’ve seen done this way!

Maple Cranberry Old Fashioned Bread Pudding — Another “But Well, Not…” comfort food dessert…for this one we’ve used whole grain bread and reduced the fat & sugar levels then added flax & chia seeds for an extra omega boost, Quebec maple syrup for flavour (and selenium!) and antioxidant packed tangy sweet dried cranberries.  Great warmed up for dessert and a wonderful treat for breakfast as well!

St Patrick’s Day Seekrit List — 13/03/11

Greetings!

Showing our love of the Irish this week with lots of green choices and extra special ‘Guinness Braised Ribs w/ Colcannon’ for one of the main courses.  Green soups, green sandwich choices, green salad, green in the tartes, green green everywhere, even in the dessert!  And we’re doing a whole grain version of classic ‘Irish Soda Bread’ to go with all that green-ness.

Same routine as usual, folks, with orders in by TUESDAY @ 6:00 and pick-ups starting THURSDAY @ 4:00, and (as usual!) if Thursday isn’t good for you just let me know and we’ll make alternate arrangements.

A NOTE FOR THE NEWBIES!

We’re thrilled to have had an influx of ‘newbies’ to the list over the past few weeks and this is just to let all of you know that if there’s something you don’t like, or have dietary issues with, to let me know!  Most of the time it’s not a problem at all to tweak the recipes so that they’re not spicy (or so that they’re extra spicy!), or have no lactose, or to leave the broccoli out, or whatever your issue may be; so please don’t be shy!!  We’re also more than happy to take requests so if there’s anything you’ve been craving or would like to see ‘healthified’ just let me know!

Last Minute Birthday Party “Snacks”

Had a wonderful time at the party last night, met a whole bunch of amazing new friends, totally enjoyed relaxing & actually socializing instead of working the whole time!   I had heard about the party earlier in the week but didn’t find out until Friday just whose birthday it was…and when I did find out the first thing I did was explore the fridges & pantry at the kitchen to see what I could throw together with only 24 hrs (more or less) notice.  Here’s what we ended up with!

70th Birthday Celebration Menu

One of my New Year’s resolutions was to start posting menus from events that we do.  As usual though I’m a little late in actually getting it together, but here’s the first one for this year.  (heh, not the first party of course, just the first menu I’ve posted!)  It was for a 70th birthday party for a charming & wonderful woman. Greetings!

The coldest day of the year so far has inspired more hearty, healthy, comforting choices this week, along with a few tropical options so you can *feel* like you’re down south somewhere, even if you’re not!

The ‘Happy’n’Harmonious’ is back again this week by special request with ‘Dates & Toasted Hazelnuts’ as the flavour this time around!  Berry studded quinoa crunch pancakes, soup to say ‘olé!’ to, sunny Moroccan flavours for one salad, and one of last summer’s faves for the other.  A variation on the much beloved ‘Smoked Ham & Caramelized Onion’ tarte, soul soothing ‘Whole Grain Barley Risotto’, spicy Cuban chicken’n’ribs, and a new dessert finishes it all off!

Smokin’ Picante Tofu — Tofu blended till smooth with chipotle peppers & our own TexMex spice mix then combined w/ finely diced sweet peppers, red onion, & roasted corn.  A multi-tasking dip that rocks tortilla chips, is great in wraps, adds protein (and extra flavour!) to nachoes, and is the perfect ‘sneak tofu’ attack!  Great to give a health-ful spin to Superbowl snacks!

Minted Feta & Watermelon Salad — Another in the ranks of ‘sounds weird, tastes great!’ menu selections!  Inspired by a version an online friend made ours combines chunks of seedless watermelon with cubes of low fat feta & cucumber with a light & refreshing vinaigrette of fresh lime, mint, & extra-virgin olive oil.  I love it piled on baby arugula with soft multigrain pita on the side!

Moroccan Spicy Orange, Olive, & Couscous Salad —  Chunks of sweet & juicy navel oranges combined with a spicy hit of harissa, red onions, black & green olives, steamed whole wheat couscous, parsley, extra virgin olive oil, & our own Moroccan spice blend.  A fave from last winter we’re bringing back for it’s summery flavours!

Maple Pumpkin ‘Cheesecake’ Crumble — Creamy Greek yogurt (0% fat!) and low fat cream cheese take the dietary sting out of this sweet treat! We help with that by using beta carotene (and fiber!) packed pumpkin to further cut the calories, and maple syrup for it’s sweet smooth flavour (and it’s selenium!)  Nestled in a ginger spiked whole grain ‘crumble’ crust w/ flax & chia added for an omega boost, topped with the whole grain crisp topping you know & love, and baked till firm.  A twist on the usual phyllo crust cheesecakes we do!

Greetings!

Inspired by the slightly chilly day to do a bunch of our fall & winter faves this week along with a few fulfilled requests.  It’s also a ‘But, Well, Not’ kind of week with our healthed-up versions of classic recipes, along with items that work wonderfully either hot or cold, so if the weather changes you’ve got a choice!

Cookies (by crezy popular demand!) are back again, this time with a twist on the ever-popular ‘Peanut Butter Flax’ cookies given a beta carotene boost w/ pumpkin & extra spiciness via crystallized ginger.  The ‘Quinoa Crunch’ pancake flavour (Toasted Hazelnut & Date) is a special request from a fave client, and the ‘Keffir Lime Edamame Dip/Spread’ from last spring is back with a new flavour twist.  Something for everyone this week!

Same routine as usual, folks, with orders in by TUESDAY @ 6:00 and pick-ups starting THURSDAY @ 4:00, and as usual if Thursday isn’t good for you just let me know and we’ll make alternate arrangements.  Also if you’d like to bring your own containers for your soups, salads, & sandwich fillings/dips just let me know…we’re happy to do whatever we can to help the environment!

Fuss Free Quinoa Crunch Whole Grain Pancakes —  Our whole grain pancakes are very lightly sweetened with Quebec maple syrup and have chia, hemp, buckwheat, & flax added for a nutritional boost & are given an extra flavourful protein packed crunch with tri-colour organic quinoa.  For the ‘Flavour of the Week’ we’ve got ‘Toasted Hazelnut & Date’ to delight your tastebuds!

Beef’n’Barley Soup, But, Well, Not — The first of our ‘But, Well, Not’ options this week!  Our homemade super-rich beef broth (made w/ a combination of top sirloin, bottom blade roast, & beef bones) that’s been de-fatted & loaded with chunks of beef, veggies (carrots, onions, celery, petit pois, corn, green beans, turnips, tomatoes, zucchini, Italian parsley, & navets.) We’ve supplemented the traditional barley with fiber filled whole grain wheatberries this time around.  Rich & hearty it’s a meal in a bowl!

Chilled (Or Not!) Watercress, Kale, & Spinach Soup — A smooth’n’creamy low fat soup thickened with a combination of local potatoes & cauliflower with the nutritional (and flavourful) grand slam of watercress, baby spinach, & kale.  Have it chilled or feel free to heat it up…it’s great either way!

Classic, But, Well, Not, Tomato Rice Soup — I’ve been craving this for weeks now so it’s back again!  Local field & Roma tomatoes quick simmered with sautéed onions, carrots, celery, Italian parsley, & fresh basil to keep the flavours fresh, and instead of boring old rice we’re using the ‘Seven Grain Mix’ you know & love from our salads.  Add a dollop of plain yogurt or low fat sour cream & a sprinkle of parmesan for a whole new flavour sensation.

Bavarian Bacon Potato Salad — Tender chunks of local crop potatoes tossed while still warm with an apple cider vinaigrette spiked with Dijon mustard, then combined with sliced green onions, crispy bacon bits, celery, & fresh parsley.  Traditionally served warm or at room temperature it’s also great cold!  (Vegetarian?  No problem for us to leave the bacon out of yours!  Just let me know!)

Mediterranean White Bean & Pesto Salad w/ Roasted Fall Veggies — Our home-cooked white beans combined with high heat roasted zucchini, peppers, spanish onions, & eggplant all lightly coated with an extra virgin oilive oil, basil pesto, & balsamic vinaigrette.  Another salad that’s great warm or cold!

Gingered Lemongrass Edamame Dip/Spread — Steamed edamame (young soybeans) puréed with miso, fresh ginger, lemongrass, green chilies, a touch of sesame oil, & sliced green onions.  A  dip filled with pan-Asian flavours for my beloved vegetarians that’s back by special request…fabulous as a dip for fresh veggies & crispy rice crackers.

Chicken Salad w/ Sundried Tomato Pesto — Chunks of oven-roasted chicken with red & green peppers, onions, & our herbed home-made sundried tomato pesto.  Great piled into a whole grain baguette, or topping a bed of baby arugula, or you can heat it up and toss it with fresh cooked pasta for a speedy weeknight dinner.

Tarte of the Week — Beef Pot Pie, But, Well, Not — Tender cubes of lean beef marinated in red wine & herbes, seared, then slow simmered in a low fat peppercorn sauce with diced carrots, onions, celery, petit pois, corn, potatoes, & green beans….all wrapped in our infamous light’n’crisp phyllo pastry for a down home taste without the extra calories of “real” pastry!

Greek Feta & Roasted Veggie “Torta” — A twist on the classic Italian torta this time made with layers of roasted eggplant, sweet peppers, mild spanish onions, & low fat feta seasoned with garlic, fresh lemon, mint, & dill then baked till golden.  Another ‘back by special request’ menu item!

Citrus Fig Balsamic Glazed Roast Pork Loin — Boneless pork loin marinated in fig balsamic vinegar, lemon, lime, & orange zest + juice, & extra virgin olive oil then slow roasted with a sweet & tangy glaze of Iranian preserved figs & citrus zest.  Served on a bed of ‘Zataar Roasted Baby Potatoes‘ with ‘Sautéed Fresh Kale & Mint.

Gingered Pumpkin & Peanut Butter Flax Cookies –– Organic crunchy peanut butter, pumpkin, crystallized ginger, whole wheat flour, flax/chia/pumpkin seeds, real butter, and a touch of sugar’n’spice….high fiber, a cold busting blast of zinc, a great source of omegas & betacarotene, and totally yummy!  Perfect for a mid-afternoon pick-me-up or a tide-me-over-till-dinner snack.

Walkin’ the Walk

Super healthy eating the past couple of days.  I’ve been cleaning up my eating choices a bit and really focusing on getting the maximum ‘fueling’ with the minimal amount of calories.  I tend not to eat ‘real’ meals but a little bit of this, a little bit of that instead, and I’m trying to break that habit and start eating actual meals off of actual plates with actual cutlery.  Today was a good day…or at least so far!

Pre-Run:  Three fried eggs (only two yolks tho’) with multigrain toast & organic almond butter.  Large pot of coffee w/ 2% milk, big glass of half water, half Oasis peach/clementine juice.

During Run:  Iced green tea w/ Cytomax + Monster Energy drink + honey.

Post-Run “Snack” (eaten w/in 15 min of finishing for max metabolic boost, muscle healing, & glycogen replacement):  Handful of raw almonds, half a pear, 1 1/2 bananas, two slices organic three grain bread (Ynew sourdough…mmmmm), 1/2 cup 2% cottage cheese, liter of 1% chocolate milk.

Post-Run Meal: BIG bowl of frisée lettuce ‘fettucine’ with crumbled cold chicken burger, extra virgin olive oil, coarse sea salt, & veggie mix of cukes, tomatoes, carrots, red cabbage, red/yellow peppers, & celery.  Added a big handful of Chia Goodness (mix of hemp, chia, & buckwheat) at the last minute for extra omega boost-age + crunchiness.  Liter of cold water, liter of iced green tea w/ fresh lime & honey.

Dessert:  Strawberries dipped in caramel 1.5% yogurt, Camino 71% dark chocolate w/ almonds & cranberries, last of the pot of coffee from this morning mixed w/ a splash of cold sugar-free chocolate almond milk.

Now, those cold chicken burgers….yesterday I made up a batch of chicken meatballs and there was a bit leftover (not all the meatballs fit on the baking sheet) so I turned it into burgers that I pan-fried in, um, bacon fat.  Nibbled on them last night then stashed the rest in the fridge & didn’t want to take the time to heat them up today so crumbled them into my salad.  The chicken meatball/meatloaf/burger mix is one of my fave adaptations of classic not so much the good for you meatballs.  Here’s the (rough) recipe for them if you’d like to make them yourself, or you can always order them from me!

I used extra lean ground chicken this time but the same technique works great w/ any ground meat.  When I’m not avoiding eating creatures w/ four legs I like to mix ground beef  in w/ the ground chicken for an extra flavour boost, and when I’m not avoiding the caloric fat whammy of sausages spicy Italian sausage (taken out of the casings) is great mixed w/ just about any other ground meat.

The veggies add moisture, along w/ fiber & all those good vitamins etc, and, of course, flavour.  The ones I used yesterday were random what was in the fridge/on hand choices but you can use pretty much anything.  I generally stick w/ carrots, onions, celery, shrooms, & something dark green but butternut squash, zucchini, fennel, sweet potatoes, & peppers have all found their way into the recipe at one time or another.

To cut the fat levels still further, and to add fiber, complex carbs, & B vitamins, I add a mix of whole grain oats + seven grain flakes that I give a quick bzzzzzzt to in the cuisinart.  Egg whites give an extra protein boost and act as a binder for the whole shebang and the chia goodness mix adds a healthy wallop of omegas.

For seasoning yesterday I used a bit of garlic, basil, oregano, parsley, & parmesan though you can go w/ classic roast chicken spices (parsley, sage, rosemary, & thyme) or some grated fresh ginger, sesame oil, hot sauce, & a touch of soy sauce or miso, or go Moroccan with grated clementine zest, cumin, coriander, & cinnamon, or go Mexican w/ cumin, paprika, chipotles, & oregano….the possibilities are endless!

* 1 kilo ground meat (extra lean chicken, turkey, beef, veal, or pork)

* 2 large carrots, 3 or 4 stalks of celery, 1 big onion, 8 oz sliced shrooms, 1 bunch fresh spinach (arugula is great in these too, as is kale)

* 2 tbsp extra virgin olive oil (melted bacon fat adds a wonderful flavour but isn’t *quite* as good for you…lol)

* 4 egg whites

* 1/2 cup chia goodness (mix of hemp, chia, & buckwheat

* 1/2 cup large flake whole grain oats

* 1/2 cup seven grain flakes (like oatmeal but, well, not)

* seasonings as you wish

Pre-heat a medium sized pot (with tight fitting lid) and add olive oil.  When oil is shimmering toss in the veggies (they can be cut pretty roughly since they’re going into the cuisinart once they’re cooked.)  Stir well to coat all veggies w/ olive oil then put the lid on & reduce heat to medium low.  Cook, stirring occasionally, until veggies are tender.  Add seasonings & remove from heat to cool a bit.

Meanwhile place the oats & seven grain flakes in the cuisinart and pulse till not quite flour.  Add sautéed veggies, egg whites, & chia goodness then process till not quite smooth but not too chunky either.  Add to ground meat and gently mix till well blended.  Let sit for a bit (over night is best but even half an hour is okay.)

Form into golf-ball sized (or miniature bite sized) meatballs & place on a lightly greasted or parchement’ed baking sheet.  Put into a pre-heated 450° oven and immediately drop heat to 350°.  Bake until cooked through & lightly browned…timing will depend on size of meatballs but about 20 min for golf-ball sized ones is pretty good.  Add to sauce  & serve on whole grain pasta, or use however you like to use meatballs.

For burgers just shape into burgers instead of balls, and for meatloaf just place in loaf pan & bake instead of forming into burgers or balls.

So nice to have a winter that hasn’t sucked (too badly) so far!  I’ve been enjoying the mild weather with multiple runs up on our beloved Mont Royal, great fun seeing all the little (and big!) kids on the toboggan runs!

Dietary Denunciation of the Week —  Skorr-ned Hearts — With Valentine’s coming up we thought heart shaped buttery rich shortbreads (using my great grandma’s recipe!) would be apropos and since it’s a holiday we’re dressing them up with skorr chips & 72% dark chocolate for an added hit of sweetness & a serotonin boost to make you *feel* like you’re in love even if you’re not! Black Bean & Bacon Soup — Last time our bacon soup was from southern France, this time we’re heading south of the border with this spicy smoky treat…black beans slow simmered in our homemade veggie broth with crispy bacon bits, peppers, onions, carrots, celery, tomatoes, chiopolte peppers and mexican spices.  Add a mulltigrain baguette & green salad and you’ve got complete proteins and a full meal!

as you can probably tell by the ‘no caps’ i still have the pins’n’stuff in my wrist, but fingers are crossed that they’ll be out by the end of the week! in the meantime we’ve delved into the request file for this week’s list with a couple of new items tossed in for fun.  of course this now means the request file is lookin’ prettyslim so if there’s something you’ve been craving just lemme know!  (and for you meatloaf lovers…it’s coming back soon!!)

CHRISTMAS!!!!

…..is quickly sneaking up on us and we’re starting to get bookings for parties, so if you’d like our help with your holiday entertaining just let me know the date and we can hold it for you, whether it’s for home or office!!  and yes, we will be doing turkey + sides again this year, possibly with classic plum pudding as well!

Cheesy Broccoli, Kale, & Spicy Red Pepper Soup — Lightly steamed fresh broccoli florets, shredded kale,  & sautéed spanish onions with sweet & hot red peppers mixed together in a rich & creamy three cheese soup made w/ our home-made veggie broth & whole grain flour.  Not as calorific as it sounds cuz we’ve used light versions of the cheeses & cut the fat from the roux.

Santa Fe Tex-Mex “Crab” Salad –
– Shredded ‘crab’ combined with diced peppers, roma tomatoes, red onions, sweet peppers, smoky chipoltes, fresh lime zest + juice, and minced cilantro.  Another mayo-less sandwich filling alternative…try it on a bed of baby greens or wrapped in a whole grain tortilla for a quick protein packed lunch.

Mediterranean Tofu Dip/Spread
— Soft & firm tofu blended till smooth with fresh basil pesto, kalamata olives, sundried tomatoes, sweet red onion, peppers, capers, Italian parsley, garlic, and a hint of fresh lemon zest.  Great on whole grain crackers for a quick snack or try it as a dip for crudités!

Dijonnaise Potato & Green Bean Salad

Pasta Sauce of the Week — Chicken Pesto Primavera — A plethora of lightly steamed fresh veggies (broccoli, carrots, red & green peppers, celery, onions, fennel, & cauliflower)  tossed with grilled garlic marinated chicken breast & a low fat creamy fresh basil pesto sauce.  Great served hot on a bed of multigrain penne with baby arugula salad on the side!

Crispy Tofu w/ Spicy Szechuan Clementine Miso Sauce — Slices of firm tofu marinated with fresh ginger, ‘rooster’ sauce, clementine zest, & rice wine vinegar then given a light battering (no visible bruises!) and pan-fried till crispy.  Served on a bed of stir-fried multi-coloured peppers & snow peas with steamed brown rice topped w/ a spicy clementine miso sauce spiked w/ fresh ginger.

Persian Pomegranate & Lime Glazed Chicken Breast — Another special request from several of you!  Boneless breast of chicken seasoned w/ zataar & sumac then lightly glazed w/ a sweet & tangy pomegranate lime sauce…served on a bed of our home-cooked chickpeas & wheatberries enlivened w/ a chiffonade of fresh mint.

Gingered Mango Blueberry Old Fashioned Bread Pudding — Another “But Well, Not…” comfort food dessert.  This time we’ve used whole grain bread and reduced the fat & sugar levels then added flax & chia seeds for an extra omega boost, diced mango & blueberries for a betacarotene & antioxidant blast, and crystallized ginger for a touch of zippy spiciness  Try having it for breakfast…an awesome change from boring cereal!
